Quick 5-Minute Homemade Granola Bars

These granola bars are delicious, gluten-free, and easy to make under 5 minutes!

Ingredients:

  • 3/4 cup smooth almond butter

  • 1/2 cup honey

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1½ cups rolled oats

  • 1 chopped dried fig

  • 3 tablespoons mix of pumpkin seeds, crushed cashews and walnuts (you can vary the seeds and nuts you use)

Instructions:

  • Line baking pan with parchment paper.

  • In a large bowl, add all of your ingredients and mix well.

  • The mixture may seem dry at first, but keep mixing and it'll come together.

  • Press firmly into the pan and use a spoon to flatten the mixture.

  • Chill in the fridge for at least 1 hour.

  • Slice into bars and enjoy!

  • Store bars in the fridge for up to one week.
