Healthy & Easy Zucchini Brownies RecipE

Ingredients: 

  • 1/2 cup oat flour (blend rolled oats in blender/food processor)

  • 1/2 cup all-purpose flour

  • 1/4 tsp salt

  • 1 tsp baking soda

  • 1/4 cup cocoa powder

  • 1 cup packed grated zucchini (with or without skin) - do not squeeze out the liquid

  • 1/3 to 1/2 cup maple syrup (or agave syrup/honey/brown sugar) - I only used 1/3 cup maple syrup since I like it less sweet

  • 1 egg

  • 1/2 cup unsweetened applesauce (or equivalent amount of mashed banana)

  • 1 tsp pure vanilla extract

  • Optional mix-in: 1/4 cup semi-sweet dark chocolate chips or chopped 80% dark chocolate chunks

  • Optional topping: melted chocolate drizzle on top or serve with ice cream!

Instructions: 

  1. Blend 1/2 cup rolled oats into oat flour using a blender or food processor.

  2. Add all-purpose flour, salt, baking soda and cocoa powder to dry mix.

  3. Mix to just combine.

  4. Grate zucchini with grater.

  5. Add applesauce, maple syrup, vanilla extract and egg into a bowl and whisk to just combine.

  6. Then add grated zucchini wet mix and mix to combine.

  7. Sift dry ingredient mixture into wet zucchini mixture until just combined.

  8. Preheat the oven to 350ºF (175ºC).

  9. Pour batter into baking pan lined with parchment paper (or coat pan with a thin layer of coconut oil to prevent sticking) and spread it evenly.

  10. Bake for 60 minutes (depends on brownie thickness and size of pan) or until you insert a toothpick and it comes out slightly sticky or crumbly wet. The toothpick should not come out completely clean or you have over baked it.

  11. Let the brownie cool completely before slicing and serving.

  12. Store in an airtight container for up to 3-5 days.

  13. Enjoy!

Icing: 

  1. 3 tbsp plain greek yogurt

  2. 1.5 tbsp honey

  3. 2 tbsp cocoa powder

  4. A pinch of cinnamon
