Healthy Orange Loaf CAke

Ingredients: 

  • 2 cups white or white whole what flour or oat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 medium sized oranges

  • 1-2 tbsp orange zest (you can add more if you like but avoid waxed oranges since they are bitter)

  • 3 eggs

  • 1/2 cup honey, maple syrup or agave syrup (I used 1/3 cup since I like it less sweet)

  • 1/3 cup oil (I used olive oil)

  • 1 tsp pure vanilla extract

Instructions: 

  1. Zest the oranges.

  2. Cut them in half and squeeze out the juice.

  3. In a large bowl, add orange juice, honey, eggs, oil and pure vanilla extract. Mix and combine.He

  4. In a separate bowl, combine flour, baking powder, baking soda and salt together.

  5. Then add dry ingredients into wet ingredients and stir to just combine. Do not over mix.

  6. Lastly add in orange zest.

  7. Preheat oven to 350 °F.

  8. Covering baking pan with parchment paper and pour batter into pan.

  9. Bake for around 60 minutes or until toothpick inserted comes out clean.

  10. Remove from oven and wait about 15minutes or until the cake is completely cool before slicing and serving.

  11. Store in an airtight container in the fridge for up to 3-5 days.
