Easy Oatmeal Pancakes

Ingredients:
2 cups rolled oats
2 tsp ground cinnamon
1 tsp baking powder
1/2 tsp salt
1 cup unsweetened plant-based milk (or milk of your choice)
1/3 cup unsweetened applesauce
2 tbsp maple syrup
1 tbsp coconut oil (melted)
1 tsp pure vanilla extract
Optional Toppings:
nut butter
maple syrup
fruit of your choice
nuts & seeds of your choice
yogurt
Instructions:
Blend rolled oats into oat flour in a food processor.
Combine all ingredients together (except for the oil) in a bowl.
Preheat pan (medium heat) with oil. Once hot, spoon 1/4 cup batter onto the pan to cook.
When batter gets bubbly and the sides are firm, flip pancakes around to cook the other side for 2-3 minutes or until both sides are light golden brown.
Add on any optional toppings you would like to the pancakes & enjoy!
