Easy Oatmeal Pancakes

Ingredients: 

  • 2 cups rolled oats

  • 2 tsp ground cinnamon

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup unsweetened plant-based milk (or milk of your choice)

  • 1/3 cup unsweetened applesauce

  • 2 tbsp maple syrup

  • 1 tbsp coconut oil (melted)

  • 1 tsp pure vanilla extract

Optional Toppings:

  • nut butter

  • maple syrup

  • fruit of your choice

  • nuts & seeds of your choice

  • yogurt

Instructions: 

  1. Blend rolled oats into oat flour in a food processor.

  2. Combine all ingredients together (except for the oil) in a bowl.

  3. Preheat pan (medium heat) with oil. Once hot, spoon 1/4 cup batter onto the pan to cook.

  4. When batter gets bubbly and the sides are firm, flip pancakes around to cook the other side for 2-3 minutes or until both sides are light golden brown.

  5. Add on any optional toppings you would like to the pancakes & enjoy!
