This candied pomelo skin recipe is good for bad breath, sore or dry throat, cough, digestion & constipation!

Ingredients:

  • skin from one whole pomelo

  • 6-7 tsp table salt (in total)

  • 1 cup sugar (I used refined sugar in the video but I’ve also used Chinese “rock sugar” and brown sugar before and they all work. For Chinese rock sugar you first need to boil the sugar with water to create a syrup)

Instructions:   

  1. Remove skin from pomelo.

  2. Cut off 3/4 of pulp leaving small amount of pulp and skin.

  3. Place pomelo skin into boiling water and add 2-3 teaspoon salt.

  4. Boil for 2mins and remove, mix as needed.

  5. Rinse & Squeeze out water 3-4 times.

  6. Soak in cold water with 3-4 tsp of salt for 2.5-3 hours.

  7. Rinse & Squeeze out water 3-4 times.

  8. Leave Pomelo skin to dry.

  9. Prepare syrup: 1 cup sugar, 1 cup water, add pomelo skin (start with high heat then reduce to medium once it comes to a boil).

  10. Keep mixing (to prevent sticking and sugar burning) and eventually reduce to low heat and keep mixing until completely dried and pomelo skin surface is candied.

  11. Remove from pan to cool.

  12. Store in airtight container when completely cool for up to 1-2months.
