Soft & Chewy Oatmeal Raisin Cookies

Ingredients: 

1 cup rolled oats

3/4 cup flour

1.5 tsp baking powder

1.5 tsp ground cinnamon

1/4 tsp salt

2 tbsp coconut oil

1 egg

1 tsp pure vanilla extract

1/3 cup honey or maple syrup

1/4 cup raisins (or any dried fruit of your choice)

Instructions: 

  1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a bowl.

  2. In a separate bowl, whisk together coconut oil, egg, and vanilla. Stir in the honey or maple syrup.

  3. Add in flour mixture, stirring until just combined.

  4. Fold in raisins (hydrate raisins first by covering them with water and microwave for 1min then drain before folding into mixture).

  5. Chill cookie dough in the fridge for 30 minutes.

  6. Preheat oven to 325°F, and line a baking sheet with parchment paper.

  7. Drop the cookie dough into 10-15 rounded scoops onto baking sheet and flatten/shape with a spoon.

  8. Bake at 325°F for 11-15 minutes.

  9. Cool on the pan for 10 minutes before transferring to a wire rack.

  10. Enjoy! Store in an airtight container in the fridge for up to one week.
